Logic would seem to indicate that defending yourself would be legally allowed (no Concord). Yes, your security rating may/will go down more...with that particular faction since you are destroying their ships, even though you are defending yoursel...

You could always have a friend in an industrial ship and a shuttle in their cargo hold follow you around to haul the shuttle when you fly your ships to where you want them to be. Then you fly the shuttle to your next ship to pick up...your friend ...
